Instruction for Soy banana bran muffins
Step 1
Preheat the oven to 180°C. Grease muffin moulds.
Step 2
Sift wholemeal flour with baking powder and soda bicarbonate into a bowl. Add bran and mix. In another bowl melt butter in the microwave. Break egg and whisk well.
Step 3
Mix together melted butter, brown sugar and mashed bananas well. Add whisked egg and mix. Add the flour mixture and mix well. Add buttermilk and mix again. Finally add walnuts and mix.
Step 4
Transfer the mixture into the greased muffin mould and bake in the preheated oven at 180°C for twenty to twenty five minutes.
Step 5
Let it cool slightly before unmoulding.

Ripe bananas mashed
