Instruction for Dutch babies-baked pancakes
  1. Place a 25cm cast iron frypan inside oven and preheat oven to 245 degrees C.
  2. In a medium bowl, beat eggs with until light. Add milk and stir. Gradually whisk in flour, nutmeg and salt.
  3. Remove frypan from oven and reduce oven heat to 220 degrees C. Melt butter in the hot frypan so that inside of pan is completely coated with butter. Pour all the batter in the frypan and return it to the oven.
  4. Bake until puffed and lightly browned, about 12 minutes. Remove from the oven, sprinkle with icing sugar and serve immediately.

  • 2 eggs
  • 1/2 cup (125 ml) milk
  • 1/2 cup (125g) plain flour, sifted
  • generous pinch ground nutmeg
  • pinch salt
  • 40g butter
  • 2 tablespoons (approx) icing sugar for dusting to serve (optional)
