Instruction for AVOCADO AND MUSHROOM SOUP
 
  1. Melt the butter in a skillet. Add onion and fry till softened.
  2. Add potato, avocado, mint and 4 cups of water or stock.
  3. Let it simmer till the vegetables are cooked. 
  4. Cool and blend Combine mushrooms with remaining water or stock.
  5. Allow it to simmer for 2-3 minutes.
  6. Add the blended mixture, salt, pepper and milk. 
  7. Heat thoroughly and serve garnished with cream.
 
Ingredients of AVOCADO AND MUSHROOM SOUP
 
  • 2 cups - Milk, 
  • 200 g - mushroom, sliced
  •  1 cup - potatoes, peeled and chopped 
  • 2 - avocado, peeled and sliced 
  • 2 tbsp - Butter 
  • 1/2 cup - onion, chopped 
  • 1/2 cup - Cream 
  • 6 cups - water/stock
  •  2 tbsp - Mint leaves salt and pepper to taste
